Baked Chicken With Coconut Sauce
Tantalize your taste buds with this incredibly simple and flavorful dish. All that is needed are some simple herbs and spices, and 60 minutes of baking time on medium heat in the oven.
Chicken Breast : 2 lbs
Marinate Chicken Breasts for 2-3 hours in pepper, salt, soy sauce, lime juice, sugar, basil and parsley
Bake in oven with the marinade (in a deep dish) with a cup of water added to it.
Allow the chicken to cook till tender and brown the top a little.
Once ready, separate the chicken from the gravy. Over a medium flame, thicken a little corn flour, add the gravy, and then add coconut milk. Let it simmer a little and then pour it over the chicken. You may also season with dry red chilis to garnish.
Tossed Vegetable Salad with salt and vinegar.
